ANZAC Biscuits (Turkish Style)

To celebrate ANZAC (Australian New Zealand Army Corps) day on the 25th April, here's a recipe for ANZAC biscuits - Turkish Style! The original recipe uses 1 tablespoon of golden syrup, substituted here with honey.

ANZAC Biscuits
(makes 12-24 biscuits)

Ingredients:

  • 1 cup rolled oats (by the muesli in Kipa)
  • 1 cup plain flour
  • ½ cup sugar
  • ¾ cup desiccated coconut
  • 3tbsp honey
  • 125g butter
  • ½ tsp bicarbonate of soda (Karbonat)
  • 1 tbsp boiling water

Method:

  1. Mix the oats, flour, coconut and sugar together in a bowl
  2. Melt the butter and honey together in a pan
  3. Mix the bicarbonate of soda with the boiling water, and add this to the butter and honey mixture, then add this to the dry ingredients
  4. For each biscuit, place a tablespoon of the mixture onto a greased oven tray and bake at 150°C-160°C for 20 minutes or until a lovely golden brown.
