Fresh Cherry Cake
The summer season brings an abundance of delicious fresh cherries to the markets around the peninsula, and what better to use them in but a fresh cherry cake, courtesy of The Torba Cook.

Method:
- Set oven to 170 degrees
- Toss cherries in the smaller quantity of flour.
- Grease a 9" cake tin.
- Stir together the flour, salt, baking powder, cinnamon/vanilla/zest and sugar.
- Add oil and eggs and enough milk to make a soft dropping mixture.
- Fold in cherries.
- Put in tin and bake for approx 60 minutes until a knife comes out clean.
