Stewed Apricots

Method:
- Wash the fruit then halve and remove the stones. Cut into even sized pieces and place into a large saucepan.
- Add the sugar and water and gently bring it to the boil, stirring frequently and gently so the fruit doesn't stick to the bottom, or break up.
- Simmer the fruit until it is just soft and keeping it's shape, any longer and it will go mushy (same great taste just doesn't look quite as good!)
