Stewed Apricots

Ingredients:

  • 2kg apricot flesh (or other fruit)
  • 1/2 cup sugar
  • 1/2 cup water

Method:

  1. Wash the fruit then halve and remove the stones. Cut into even sized pieces and place into a large saucepan.
  2. Add the sugar and water and gently bring it to the boil, stirring frequently and gently so the fruit doesn't stick to the bottom, or break up.
  3. Simmer the fruit until it is just soft and keeping it's shape, any longer and it will go mushy (same great taste just doesn't look quite as good!)
This recipe can also be used for plums and nectarines, although you may need to add more sugar depending on the tartness of the fruit. It can be frozen in portions and kept for when the fruit is no longer in season!
