Leek & Parmesan Filo Slice
This delicious recipe for Leek & Parmesan Filo Slice is a great winter warmer, using fresh, local, winter ingredients.
Serves 4
Ingredients:
- 6 slices filo pastry/Turkish yufka
- unsalted butter, melted, plus 1 tbsp extra for frying
- 125g freshly grated Parmesan
- 5 leeks, sliced into matchsticks
- 4 garlic cloves, chopped
- 1/3 cup dry white wine
- 1/2 bunch chives, chopped
- salt & pepper
Method:
- Brush the pastry sheets with the melted butter.
- Place one sheet onto a baking tray, sprinkle evenly with Parmesan and season lightly, then cover with another sheet of pastry. Repeat this with the remaining sheets of pastry, leaving the top sheet plain. Cook at 160C for approx 10-12 mins or until golden brown.
- Meanwhile, melt the 1tbsp of butter in a pan and gently saute the leeks and garlic until soft, but not brown.
- Add the wine to the pan and completely reduce, then add the chives and season to taste.
- When the pastry is ready, gently press down the centre, leaving a raised edge all the way round. Spread the leek mixture on top of the pastry, sprinkle with a little more Parmesan, and put back in the oven for 5-10 mins, until the Parmesan has melted slightly.
