Chicken (or Halloumi) & Vegetable Skewers

With the warmer weather coming, here's a great healty BBQ recipe for chicken (or halloumi cheese) & vegetable skewers.

Serves 2

Ingredients:

  • 300g chicken (or halloumi)
  • 1 onion
  • 1 green pepper
  • 1 red pepper
  • vegetable oil
  • 6 wooden skewers, soaked in water for 1 hour
  • 2 tbsp melted butter

    For Marinade:
  • 125ml yoghurt
  • small piece fresh root ginger, peeled
  • 3 garlic cloves, peeled
  • chilli powder, to taste
  • 1 tsp garam masala
  • 1 tsp ground cumin
  • seeds of 6 cardamom pods, ground
  • 1 tbsp flour
  • 2 tbsp lemon juice
  • 2 tbsp vegetable oil


Method:

  1. Puree all the marinade ingredients until smooth.
  2. Chop all the vegetables and the chicken or cheese into 2.5cm cubes, then put in a bowl and cover with the marinade. Leave for at least 30-40 minutes in the fridge.
  3. Thread the meat or cheese and vegetables alternately on the skewers, then cook on a barbecue, under a grill or in the oven. Halfway through cooking drizzle over the 2 tbsp melted butter.
