Chicken (or Halloumi) & Vegetable Skewers
With the warmer weather coming, here's a great healty BBQ recipe for chicken (or halloumi cheese) & vegetable skewers.
Serves 2
Ingredients:
- 300g chicken (or halloumi)
- 1 onion
- 1 green pepper
- 1 red pepper
- vegetable oil
- 6 wooden skewers, soaked in water for 1 hour
- 2 tbsp melted butter
For Marinade: - 125ml yoghurt
- small piece fresh root ginger, peeled
- 3 garlic cloves, peeled
- chilli powder, to taste
- 1 tsp garam masala
- 1 tsp ground cumin
- seeds of 6 cardamom pods, ground
- 1 tbsp flour
- 2 tbsp lemon juice
- 2 tbsp vegetable oil
Method:
- Puree all the marinade ingredients until smooth.
- Chop all the vegetables and the chicken or cheese into 2.5cm cubes, then put in a bowl and cover with the marinade. Leave for at least 30-40 minutes in the fridge.
- Thread the meat or cheese and vegetables alternately on the skewers, then cook on a barbecue, under a grill or in the oven. Halfway through cooking drizzle over the 2 tbsp melted butter.
