Healthy Baked Chicken with Tomatoes
Here's a healthy baked chicken recipe with tomato sauce - also great served with spinach and mushrooms.
Serves 2
Ingredients:
- 2 slices bread
- 400 grams chopped tomatoes
- 4 tablespoon chopped parsley
- 2 garlic cloves (crushed)
- 2 tablespoons lemon juice
- 2 pinch of cayenne pepper
- 2 tablespoons Olive oil
- 4 Chicken thigh fillets (high fillets are cheaper and don't dry out as much - allow 100-150g per person)
Method:
- Preheat the oven to 180C.
- Make breadcrumbes from the slice of bread
- Combine the bread, tomatoes, parsley, garlic, lemon juice and cayenne in a saucepan, bring to the boil and simmer for a couple of minutes, stirring well.
- Lightly oil an ovenproof dish with the oil, put the chicken in the dish, pour over the sauce, cover with aluminium foil and bake for 25 minutes or so, depending on the thickness of the fillets.
