Chocolate Brownies

Ingredients:

  • 1/2 cup butter, melted
  • 1/2 cup unsweetened cocoa
  • 1 cup sugar
  • 2 eggs
  • 2 tsp vanilla
  • 1/2 cup flour
  • 1/4 tsp salt
  • 1-2 cups chocolate chips (milk, dark or white) depending on how much you like chocolate!!

Method:

  1. Preheat oven to 180C. Grease an 8 inch square pan or line with foil.
  2. Combine the melted butter and cocoa in a bowl, stirring until the cocoa is dissolved.
  3. Add the sugar and mix well.
  4. Add the eggs one at a time stirring well until combined.
  5. Stir in the vanilla, flour and salt until you can no longer see any flour, taking care not to over mix.
  6. Fold in the chocolate chips gently.
  7. Spread the mixture evenly in the pan and bake for about 20-25 mins. Take care not to over bake or the brownies will be too dry. When tested with a knife/skewer it should come out with moist crumbs not clean.
  8. Let them cool completely before cutting into squares ready to serve.

The chocolate chips can be substituted or complemented by anything you like! Raisins, nuts, marshmallows, maraschino cherries...
