Chocolate Brownies
Ingredients:
- 1/2 cup butter, melted
- 1/2 cup unsweetened cocoa
- 1 cup sugar
- 2 eggs
- 2 tsp vanilla
- 1/2 cup flour
- 1/4 tsp salt
- 1-2 cups chocolate chips (milk, dark or white) depending on how much you like chocolate!!
Method:
- Preheat oven to 180C. Grease an 8 inch square pan or line with foil.
- Combine the melted butter and cocoa in a bowl, stirring until the cocoa is dissolved.
- Add the sugar and mix well.
- Add the eggs one at a time stirring well until combined.
- Stir in the vanilla, flour and salt until you can no longer see any flour, taking care not to over mix.
- Fold in the chocolate chips gently.
- Spread the mixture evenly in the pan and bake for about 20-25 mins. Take care not to over bake or the brownies will be too dry. When tested with a knife/skewer it should come out with moist crumbs not clean.
- Let them cool completely before cutting into squares ready to serve.
The chocolate chips can be substituted or complemented by anything you like! Raisins, nuts, marshmallows, maraschino cherries...
