İmam bayıldı with a twist
Serves 4-8
Ingredients:
- 5tbsp sunflower oil
- 1 large onion, finely chopped
- 3 garlic cloves, crushed
- 2tbsp turmeric
- 2tbsp ground cumin
- 2tbsp ground coriander
- 2tbsp mild curry powder
- 3 aubergines, cubed
- 400g tin chopped tomatoes, or fresh peeled & chopped
- 50g sultanas
- 150g yoghurt
- bunch of fresh mint
Method:
- Heat a pan and add the oil. Fry the onion and garlic until soft and translucent.
- Sprinkle over all the spices and cook for about 2 minutes, stirring all the time.
- Add the aubergines and tomatoes, then cover and simmer for 45 minutes, stirring occasionally.
- Add the sultanas and cook, with the lid on, for another 10 minutes.
- Remove from the heat and allow to cool completely. Refrigerate for at least 24 hours to allow the flavours to fully develop.
- Serve cold with the yoghurt and sprinkle with mint.
