İmam bayıldı with a twist
Serves 4-8

Ingredients:

  • 5tbsp sunflower oil
  • 1 large onion, finely chopped
  • 3 garlic cloves, crushed
  • 2tbsp turmeric
  • 2tbsp ground cumin
  • 2tbsp ground coriander
  • 2tbsp mild curry powder
  • 3 aubergines, cubed
  • 400g tin chopped tomatoes, or fresh peeled & chopped
  • 50g sultanas
  • 150g yoghurt
  • bunch of fresh mint

Method:

  1. Heat a pan and add the oil. Fry the onion and garlic until soft and translucent.
  2. Sprinkle over all the spices and cook for about 2 minutes, stirring all the time.
  3. Add the aubergines and tomatoes, then cover and simmer for 45 minutes, stirring occasionally.
  4. Add the sultanas and cook, with the lid on, for another 10 minutes.
  5. Remove from the heat and allow to cool completely. Refrigerate for at least 24 hours to allow the flavours to fully develop.
  6. Serve cold with the yoghurt and sprinkle with mint.
