Cauliflower Popcorn

Ingredients:

  • 1 medium head cauliflower
  • 4 tbsp olive oil
  • 1 tsp salt, to taste
  • 1/2 tsp curry powder or cayenne pepper, to taste

Method:

  1. Preheat the oven to 425F or 220C.
  2. Trim the cauliflower, getting rid of the core and any thick stems. Cut into florets that are about the size of a ping-pong ball (if you make them too small then they will disintegrate while cooking).
  3. Put the cauliflower in a bowl, add the rest of the ingredients and toss to coat well.
  4. Line a baking tray with baking paper and spread the cauliflower pieces onto it in a single layer. Roast in the oven for approximately 1 hour turning about 3 or 4 times until most of each floret has turned golden brown. The browner they are, the sweeter they will taste.
  5. Serve immediately as a snack or as a side dish.
