Perfect Yorkshire Puddings (using Turkish ingredients)
Have you struggled to get Yorkshire puddings to rise using Turkish flour? Follow this super-simple recipe for perfect puddings every time.
Makes approximately 4 puddings, can be doubled easily
Ingredients:
- 1 egg (medium-large)
- 45g plain flour (use the standard Söke "Geleneksel Un" sold in white and red packets)
- 100ml milk (UHT carton milk is fine)
- pinch of salt
- a little sunflower oil
Method:
- Preheat oven to around 220C.
- Pour approximately 2mm sunflower oil into the bottom of each cup of your tray (the silicone-plastic muffin trays work well). Put the tray into the oven to preheat the oil.
- To make the batter, mix the egg, flour, salt and milk, thoroughly - preferably with a blender/whisk.
- Once the oven is up to temperature, remove the tray and carefully pour the batter into the hot oil in each cup. Aim to half-fill each cup.
- Take care not to open the oven door during cooking. After about 20 minutes the puddings should have risen fully, and should be browning nicely. Take them out now if you prefer a crispy-on-top but slightly stodgy base, or - if you like your Yorkshires crispy - simply leave them in for a further 5-10 minutes until they are golden brown all over.
