Meatballs in Tomato Sauce (Sulu Köfte)
Serves 3-4
Ingredients:
- 400g beef mince
- 1/4 cup rice, washed, drained
- 1 egg, beaten
- Salt
- Pepper
- 1/2 cup flour
- 1 onion, grated
- 4-5 tbsp tomato puree
- 3 tbsp extra virgin olive oil
- 1 tbsp butter
- 2 cups water
- 1tbsp fresh parsley, chopped
Method:
- Place the flour onto a large plate. In a bowl, mix together the mince, rice, egg, and seasoning. Take a teaspoon of this mixture and roll into a small ball. Repeat until all the mixture is used, placing the balls on the plate of flour.
- Saute the onion with the olive oil and butter for a couple of minutes in a medium sized pot. Add the tomato puree and water, then season, and bring to the boil over a medium heat.
- Make sure all the kofte balls are coated in flour, then gently drop them into the pot and stir slowly. Reduce the heat slightly and cook for about 20 minutes. The cooking time will vary depending on how large or small you have made your Köfte and will need to be adjusted accordingly.
- When the meatballs are cooked through, sprinkle the chopped parsley on top and serve, perhaps with some bread on the side.
To make a more substantial meal you can add vegetables to the sauce: Add 1 chopped carrot, 1/4 cup peas, and 1/2 cup cauliflower florets to the pot at the same time you add the meat. You may need a little extra water too if the consistency becomes too thick.
