French Onion Soup

Well I have started to notice a nip in the air; it definitely seems to be getting colder. So here is one of my favourite dishes, very quick very simple and totally delicious French Onion Soup.

4 Portions of gratinated French onion soup

Ingredients
4 medium sized onions
2 pints beef stock or a couple of beef cubes
25 grams flour
Any scraps of cheese about 150 to 200 grams
4 slices of bread or enough to cover the tops of 4 soup bowls
Salt and pepper to season.

Preparation
Peel and cut the onions in half remove the root and slice finely.
Toast the bread on both sides.
Grate the cheese
Preheat the oven to 200 degrees

Method
Now this bit is gonna sound a little crazy but here goes... Chuck the sliced onion into a pan and cook without butter and no oil, now I know you are thinking - "but they will burn", no they won't as long as you keep on stirring, they will first soften then they will start going brown and eventually caramelise. The onions contain natural sugars, so let’s do this as natural as possible, and you'll get a rich dark colour, without using gravy browning - just the browning of the onions.

By now you should have a stodgy mixture of dark brown onions in the bottom of your pan. Now add the flour and mix in all the lumps and add the beef stock, bring to the boil and you will notice that it has thickened the soup, now add seasoning to your taste. Ok we are on the final stretch, ¾ fill your soup tureens or bowls with the soup and then place your toasted bread and grated cheese on top, pop in the oven till the cheese has melted and bubbling about ten minutes, voila, serve it piping hot and you have a wonderful winter warmer.
