Homemade Ginger Nut Biscuits
Now that you've made some Golden Syrup, why not make some lovely Ginger Nut biscuits?
Ingredients:
- 100g butter
- 225g sugar, plus extra for topping
- 1tbsp golden syrup
- 1 egg, beaten
- 250g flour
- 1tbsp ground ginger (zencefil toz, in Turkish)
- 1tsp baking soda
Method:
- Melt the butter in a pan with the sugar. Add the golden syrup and stir to mix. Remove from the heat and leave to cool slightly.
- When cool add the egg, flour, ginger, and soda. Mix well and roll into balls (about walnut size). If the mixture is a little wet then use a teaspoon to place walnut sized heaps spaced well apart (they spread!) onto a baking sheet lined with greaseproof paper. Dip one side of the balls into sugar and place, sugar up,on baking sheet, or sprinkle sugar on to the heaps.
- Bake in a preheated oven at 160C for about 15 minutes.
The ginger nuts are ready when they have puffed up and then collapsed. If you prefer them softer then cook a little less but after 15 minutes they will be hard and crunchy just like shop bought ones! If you like of course then you can add more ginger to give a stronger flavour too. Enjoy with a cup of tea!!
