Homemade Ginger Nut Biscuits

Now that you've made some Golden Syrup, why not make some lovely Ginger Nut biscuits?

Ingredients:

  • 100g butter
  • 225g sugar, plus extra for topping
  • 1tbsp golden syrup
  • 1 egg, beaten
  • 250g flour
  • 1tbsp ground ginger (zencefil toz, in Turkish)
  • 1tsp baking soda

Method:

  1. Melt the butter in a pan with the sugar. Add the golden syrup and stir to mix. Remove from the heat and leave to cool slightly.
  2. When cool add the egg, flour, ginger, and soda. Mix well and roll into balls (about walnut size). If the mixture is a little wet then use a teaspoon to place walnut sized heaps spaced well apart (they spread!) onto a baking sheet lined with greaseproof paper. Dip one side of the balls into sugar and place, sugar up,on baking sheet, or sprinkle sugar on to the heaps.
  3. Bake in a preheated oven at 160C for about 15 minutes.

    The ginger nuts are ready when they have puffed up and then collapsed. If you prefer them softer then cook a little less but after 15 minutes they will be hard and crunchy just like shop bought ones! If you like of course then you can add more ginger to give a stronger flavour too. Enjoy with a cup of tea!!
